Delicious Maremma Tuscany: from the farm and vineyard, to the table

Maremma has an outstanding culinary and wine-making tradition. When traveling in this part of Tuscany off the beaten track, you will discover contrasting and varied flavours, as well as dishes that are simple and genuine. Maremma includes different landscapes that span from the pristine coastline to the picturesque hills and mountains, and embraces ancient fishing, hunting, and farming traditions. The result is that you will find rich meat dishes, fresh fish recipes, and tasty soups. And let’s not forget the excellent local extra virgin olive oil and numerous cheeses and fine wines.

Speaking of wines, in this part of Tuscany you can travel along the Strade del Vino, or Wine Routes:

• “Colli di Maremma” featuring the top Tuscan red wine, Morellino di Scansano DOCG, as well as the DOC wines Ansonica dell’Argentario, Bianco di Pitigliano, Capalbio, Parrina and Sovana;
• “Montecucco” with the unique flavour from the slopes of the Amiata Mountain (Vino Montecucco DOC);
• “Monteregio di Massa Marittima” where to toast with the Vino Monteregio DOC.

Traveling around Maremma you can find beautiful farms that are full of history and produce quality organic products. These include meat from the typical Maremmana cattle and cold cuts from Macchiaiola and Cinta Senese pigs; extra virgin olive oil like Seggiano DOP; and cheese of the calibre of Pecorino Toscano DOP. And then there are also the products from the water, such as fresh fish from the sea around Monte Argentario and the precious bottarga (cured fish roe) from Orbetello Lagoon.

Foodie Holiday in Maremma Tuscany with a gourmet stay at Argentario Golf Resort & Spa

The 5-star Argentario Golf Resort & Spa features two restaurants that propose Tuscany’s cuisine in different ways. Dama Dama is the gourmet restaurant where Executive Chef Emiliano Lombardelli uses typical products to create distinctive dishes that mix traditions and innovation. Club House Restaurant offers a more informal atmosphere and traditional dishes from Maremma, such as tortelli al ragù, grilled fish and shellfish, organic caciotta ravioli, octopus and panzanella.

In both restaurants, Chef Lombardelli uses only genuine products that come from small, carefully selected farms from Maremma Tuscany. These include Azienda Biologica Rustici and Caseificio Il Fiorino.

Biologica Rustici has 50+ years of history in breeding pigs and dairy and meat cattle, and for the past 20 years it has been producing exclusively certified organic products – not only meat but also organic extra virgin olive oil, yogurts, and rustic sauces.

Caseificio Il Fiorino has won awards and recognitions at international level, yet this dairy maintains the craftsmanship that is typical of Maremma. It produces renowned products such as Pecorino Riserva del Fondatore, Pecorino Grotta del Fiorini and Cacio di Caterina.

For the wine lists at Dama Dama and Club House, Restaurant Manager and Sommelier Nicola Alocci has selected some of the most prestigious and renowned Maremma wineries, such as Rocca di Frassinello, Tenuta L’Ammiraglia – Frescobaldi, Morisfarms, ColleMassari, Rocca di Montemassi and Monteverro – but also small niche gems like Poggio Cagnano, Celestina Fé, Tenuta Monteró, Casavyc and Provveditore. These are all wineries from the so-called Maremma Grossetana (historically known as the Maremma Senese), which is today simply referred to as Maremma and includes all the villages and towns in the province of Grosseto.

Argentario Golf Resort & Spa also works with some exclusive wineries from the so-called Alta Maremma (historically known as Maremma Pisana), which covers some areas in the provinces of Livorno and Pisa. The wineries from Alta Maremma – in particular from Bolgheri and surroundings – are very renowned and appreciated, and represent the great wine-making Tuscany. The wine list by Nicola Alocci therefore includes great exclusive excellences such as Sassicaia by Tenuta San Guido, Ornellaia by Ornellaia, Masseto by Tenuta Masseto, Lodovico by Tenuta Biserno, Lupicaia and Tassinaia by Castello del Terriccio, Giusto di Notri by Tua Rita, Argentiera by Tenuta Argentiera, Grattamacco by Podere Grattamacco, Gualdo al Tasso by Antinori.

Throughout summer, Argentario Golf Resort & Spa organizes special evenings with live music during which visitors can taste local wines and food products on the panoramic terraces of its restaurants. Foodies can also book an unforgettable cooking class with Chef Emiliano Lombardelli!
